Blueberry Compote
Yields 1-2 cups
-1 pint blueberries
-1/3 c water
-1/2 c sugar
-1/8 tsp vanilla extract
In medium saucepan, place 3/4 of the pint of blueberries and cover with the water. Heat over medium heat until it starts to boil and some blueberries “pop”.
Reduce heat to low. Add remaining blueberries, sugar, and vanilla. Stir to combine.
Simmer over low heat until thickened and coats the back of a spoon.
Serve over waffles (see above photo), pancakes, or stirred into your favorite Greek yogurt!
